DVD Bluray RIP

What do you use to rip DVDs and Blurays? I think I want to create .mkv files. Plex is what I use for my HTPC and i want to rip all my movies.

I've always used DVDShrink to rip if I had planned on just burning to a regular dvd. I've not got into ripping and converting yet. It's on the "To-Do List" though.

You have to play around with it to get it to work on non-computer based formats but I find it useful...
